This talk examines recent declarations about Philippine Cuisine as the new exciting food trend in the culinary world. By interrogating notions of authenticity, appropriation, and commodification, the talk will attempt to "stir the pot" with issues of transnational culinary expertise and Filipino hiya (shame).
Martin Manalansan IV (Ph.D., University of Rochester) is Chair of the Department of Asian American Studies at the University of Illinois, Urbana-Champaign. He is the author of Global Divas: Filipino Gay Men in the Diaspora (Duke University Press, 2003), and the editor or co-editor of four anthologies, including Filipino Studies: Palimpsests of Nation and Diaspora (NYU Press, 2016) and Eating Asian America: A Food Studies Reader (NYU Press, 2013).
