Speaker: Erica Peters, Director, Culinary Historians of Northern California

Erica Peters will discuss her recent book, which explores how French colonial rule affected Vietnamese culture and cuisine, including how it came to influence the taste of such iconic products as Vietnamese fish sauce and rice, as well as how the Vietnamese resisted French control at the table and in the marketplace. The author (Ph.D., Chicago) is director of the Culinary Historians of Northern California.
